I subscribed to the same podcast I had in Podcast app. And then I removed the Podcast App. When you do that all data is deleted too. The iOS included podcasts app was formerly an advantage over Android, where you had to find something in that app store, but not with the latest versions.
The Android selection is or was pretty bad. Pocket Casts is about the best option in terms of cross-platform compatibility. Just looking at Overcast, realizing that the search box is dark gray with black text. How idiotic is that? That sounds like a config issue at your end, I have a light grey to define the search box, with black text. It looks like you may need to restart Overcast after switching between appearance modes. In light mode, the text is black on a light gray field with plenty of contrast; in dark mode, the text is white on gray, again with contrast.

Simply deleting has not worked for me but option-back delete has. However, I do see that if I don't delete from both my devices and iTunes, episodes creep back in. This is strange and I wish you luck. You can also make playlists for podcasts not smart playlists and nothing will be added or deleted unless you want it.
To add a podcast, click on the three dots next to the podcast name and choose Add to playlist. Still keeps downloading old episodes I'm talking from like, years ago. My library still isn't saving. It "thinks" it's still Sept. The last date it saved my settings. I can make new playlists for podcasts although this is superfluous , but iTunes still insists on downloading old episodes anyway, so why bother?

Well, I moved and consolidated everything i needed to from iTunes from my old mac to a Toshiba external hd word of caution: DON'T format these-or any for that matter- drives with the software bundled with them!
I did, and had to purchase the software from the developer when I upgraded to Sierra. Use disk utility to format! My internal hd has iTunes- and all associated folders, etc- but I don't even use it.
